1 cup almond meal
1/4 cup pumpkin
1/2 cup canned organic coconut milk
3 eggs whisked
1 T pure vanilla extract
1/4 tsp baking powder
1-2 T Cinnamon ( I like mine loaded with cinnamon)
1 tsp Pumpkin Pie Spice
1.) In a small mixing bowl whisk together the eggs then add the pumpkin, coconut milk, and vanilla extract.
2.) Combine the almond meal, spices and baking powder then add to the wet ingredients.
3.) Grease the waffle maker with some grass fed butter or coconut oil then scoop even amounts of batter into waffle maker.
Makes 4 waffles on my griddle:-)
Top with raspberries, blueberries, bananas and peanut butter, almond butter, or a touch of pure maple syrup or raw honey. ENJOY!
